MAHA - Homemade Donuts
In the next installment of MAHA, we are going to make homemade donuts. Who doesn't like a donut? But the ones you get in the stores are not healthy. You can easily make healthier donuts at home in your own kitchen.
They might not be like a Shipley's donut, but you will feel good about giving them to your children.
MINI DONUTS
From Allison
1 cup flour
1 tablespoon baking powder
1 egg
1/2 cup milk
1/2 cup sugar
1/2 teaspoon vanilla
4 tablespoons coconut oil
(For chocolate add 2 tablespoons cocoa.)
Mix all and put in mini donut pan.
Bake at 350 degrees until done in the middle. Glaze or coat with powdered sugar if desired.
WHOLE WHEAT CINNAMON SUGAR DONUTS

1 cup + 1 tablespoon freshly-milled white wheat flour or whole wheat flour from the store
1/3 cup (packed) coconut sugar, maple sugar or sucanat - brown sugar also works
1 1/2 teaspoon baking power
1/4 teaspoon sea salt
1/4 cup milk
1/4 cup plain yogurt
1 large egg
1 1/2 teaspoons vanilla
Preheat oven to 350 degrees and spray donut pans with non-stick spray – even silicone.
Combine flour, baking powder and salt.
In a separate bowl, whisk together the brown sugar of choice and egg.
Add milk, yogurt and vanilla and continue whisking until smooth.
Slowly add the wet ingredients to the dry ingredients and mix until just combined. Do not overmix.
Put the batter into a ziplock bag or pastry piping bag, snip the corner and pipe the batter into the pans. You can also just use a spoon.
Bake donuts at 350 degrees for 8-10 minutes until lightly golden on the tops and fully-cooked in the middle.
Remove the donuts from the pans and allow them to rest for a minute or two on a baking rack.
Dip each donut in the butter and then into the cinnamon-sugar mixture.
Notes:
Because this recipe doesn't have a particular flavor, it is a perfect base to add different flavors to - think apple cider donuts, pumpkin donuts, etc.
Try dipping the donuts in chocolate or vanilla frosting and adding sprinkles for a fun treat.
Another fun idea is to dip in some sort of maple glaze and sprinkle cripsy bacon pieces on top.
Chocolate Glaze:
1/2 cup semi-sweet chocolate chips
2 tablespoons butter
2 teaspoons honey or maple syrup
Melt chocolate chips, butter and honey on stove, stirring.
Transfer the glaze to a shallow dish.
Dip one donut at a time into the glaze, allowing the excess to fall off into the bowl.
Allow the donuts to set for 1-2 minutes.
Powdered Sugar Coating
1 cup powdered sugar
Put donuts in a zip bag and shake to coat. If the coating isn't sticking, lightly brush the donuts with melted butter, then shake in powdered sugar.
Cinnamon Sugar Coating
2/3 cup granulated sugar
2 teaspoons cinnamon
3 tablespoons melted butter
Melt the butter in a shallow bowl or plate. Set aside.
Mix the cinnamon and sugar and set aside.
Dip the donuts in the butter and then the cinnamon-sugar mixture.
