MAHA - Homemade Popcicles

Just like for gummies, there is a formula for popcicles.


2 cups of fruit
1 cup of fruit juice, milk, coconut water, or yogurt
2 to 4 tablespoons sweetener
Blend everything together until smooth.
Pour into molds, insert sticks, and freeze.
Remove pops from molds by running the mold under warm water, or by setting them in a sink of warm water for a few seconds.


I found it very helpful to use my kitchen scale. Just put the blender container on the scale and measure in your ingredients, taring between each one.
1 cup = 8 oz.


Just about every one of these recipes yielded 10 popcicles.


Strawberry Popsicles


2 cups of strawberries, roughly chopped
1 cup of coconut water
2 tablespoons of honey
Optional extras: 1/4 teaspoon of vanilla, 1 teaspoon of lemon zest, or orange juice instead of coconut water. You could also put in another summer fruit, like peaches, raspberries, or cherries.


Pineapple Mango Popsicles

1 cup of pineapple, chopped
1 cup of mango, chopped
1 cup of coconut water
2 tablespoons of honey
Optional extras: 2 tablespoons of shredded coconut or coconut milk instead of coconut water.


Blueberry Popsicles
2 cups of blueberries
1 cup of full-fat vanilla yogurt (regular or Greek)
2 tablespoons of honey
Optional extras: 1/4 teaspoon of vanilla, 1 teaspoon of lemon zest, or blueberry instead of vanilla for even more blueberry flavor.

Mint Chocolate Chip Popcicles
2 cups whole milk Greek yogurt
3/4 cup whole milk
1 tablespoon sugar, maple syrup or honey
1/3 teaspoon peppermint extract
1/3 teaspoon vanilla
green food coloring (optional)
1/2 cup mini chocolate chips

In a large bowl mix the Greek yogurt and milk together.
Add in the sugar, extracts and food dye (if using).
Mix in the chocolate chips.
Pour the popsicle mixture into your favorite mold and freeze for at least 4 hours.
Taste the mixture before freezing to ensure you like the flavor. If you want a sweeter popsicle, use more sugar.

Fudgecicles
2 cups milk
3/4 cup heavy cream
1/4 cup sugar
2 tablespoons unsweetened cocoa powder
3/4 cup semi-sweet chocolate chips
1 1/2 teaspoons vanilla
1/4 teaspoon sea salt
In a large sauce pan, heat the milk, cream, sugar and cocoa powder over medium heat. Bring to a light simmer and then immediately remove from the heat.
Place the chocolate in a bowl.
Pour the hot milk over top and let sit for a couple of minutes.
Add in the vanilla and sea salt.
Blend with a whisk until smooth.
Pour mixture into 8 ice pop molds and freeze for about 30 minutes.
Then insert wooden popsicle sticks and freeze overnight, or until frozen.
To release the pops, run the bottom of the mold under warm water, or let sit on the counter for a few minutes.

Pina Colada Popcicles
1 cup pineapple juice
1 cup coconut milk
1/4 cup sugar
1/2 cup fresh pineapple, chopped
1/4 cup white rum (optional)
In a small saucepan, combine the pineapple juice and sugar over medium heat. Stir until the sugar has completely dissolved, then remove from heat and let cool.
In a blender, blend the chopped fresh pineapple until smooth.
Add the cooled pineapple juice mixture, coconut milk, and rum (if using) to the blender and pulse until well-combined.
Pour the mixture into molds leaving a bit of room at the top for expansion as the popsicles freeze.
Insert popsicle sticks into the molds and freeze for at least 6 hours or overnight.
To remove the popsicles from the molds, run the molds under warm water for a few seconds to loosen them.


HOMEMADE ICE CREAM
2 cups whole milk
2 cups cream
3/4 cup sugar
1 tablespoon vanilla

Put milk and cream in a glass measuring cup.
Whisk in sugar and vanilla until sugar is dissolved, about 15 seconds.
Immediately pour into your ice cream maker.
Churn to your ice cream maker's specifications--30 minutes or so.
If you are adding in frozen berries or fruit sauce, pour them into the ice cream maker while its still going after 20-25 minutes.

ICE CREAM WITHOUT AN ICE CREAM MAKER

Chocolate Ice Cream
2 cups heavy whipping cream
1 14-oz. can of sweetened condensed milk
1/2 cup cocoa powder
1 teaspoon vanilla
Please cold cream in a mixing bowl and whip until stiff peaks are formed.
Add condensed milk, cocoa powder, and vanilla.
Beat on low speed until incorporated.
Thansfer into a container and freeze for at least 6 hours.
If you want vanilla ice cream, leave out the cocoal powder.
You can also add fruit to this before freezing.
