Make-Ahead Breakfasts
These are some rather unique recipes, at least to me, that I saw on a YouTube video from Becoming a Farmgirl. Check out her blog at becomingafarmgirl.com. I thought we would try a couple today....
Cornmeal, Sausage and Egg Muffins
Cook 1 lb. breakfast sausage with about 4 eggs
Make up a cornbread batter, using enough milk to make a thicker batter than usual
Pour sausage mixture into cornbread batter
Add
1 can of creamed corn
½ cup melted butter
chopped green onion
shredded cheese
Bake at 400 for 30 minutes or until done
Cool and freeze for up to 3 months
Pancake Sausage on a Stick
Cook link sausage until done
Thread the sausage on skewers
Make up a very thick pancake batter in a tall canning jar
Dip the sausages until they are very well-coated
Fry in a good fat
Cool and then freeze for up to 3 months
Freezer Oatmeal Cups
Cook oats as you usually would adding
cinnamon
dried fruit
dates
vanilla
Cool in refrigerator until firm
Put in muffin cups and add
frozen fruits and/or nuts
Freeze for 4 hours at least
Slide out of muffin tin and freeze
When ready to eat, put in bowl
Add hot water and microwave
Green Eggs and Ham
Blend up some fresh or frozen spinach
Whisk up some eggs adding the spinach and some shredded cheese
Put some cooked bacon or ham into muffin tin cups
Pour egg mixture on top
Bake at 400 for 20 minutes
Cool and freeze
Eggs and Hashbrowns
Cook bacon and crumble
Season some hashbrowns (either homemade or frozen and thawed)
Put hashbrowns in muffin tin cups
Top with bacon, green onion and cheese
Pour egg mixture over
Bake at 400 for about 20 minutes
Waffle Cups
Whisk up some eggs with milk and Parmesan cheese and seasoned with salt and pepper
Cook some pan sausage
Put frozen mini waffles in muffin tin cups
Top with shredded cheese and cooked pan sausage and some more cheese
Add the egg mixture
Bake at 400
Cool and freeze
Serve with maple syrup
Pancake Sandwiches
Cook or use frozen sausage patties
Make up a pancake batter and cook the pancakes the size of your sausage patties
Cook some scrambled eggs with cheese
Make into sandwiches – pancake, sausage patty, eggs, pancake)
Freeze and then individually wrap
These recipes are easily adapted to whatever meat, cheese or vegetables you have available. Feel free to use what's in your refrigerator and freezer.
